recipe:: cranberry scones

So today I finally got around to making the scones I've been drooling over for two weeks.

Per request, here's the recipe:

Sarah's Cranberry Scones

- scant 4 cups white all-purpose flour
- 2 eggs, beaten
(- 1 egg, beaten, for egg wash)
- scant 1/3 cup white sugar
- 1 1/2 Tablespoons baking powder
- 1 stick butter, softened
- 1 cup milk (I use plain soymilk)
- 1/2-2/3 cup dried cranberries or craisins
- 1/2 cup shredded coconut (if you like it)
- 1 teaspoon imitation vanilla flavoring
- 1/2 teaspoon almond flavoring

Preheat oven to 425 F. Line cookie sheet with parchment paper.

Add all ingredients into a mixing bowl except the egg wash and the cranberries.

Mix in mixing bowl on Slow, for 2 minutes, or for 5 minutes if doing it by hand.

Add cranberries slowly into the dough just before done mixing. Turn lump of dough onto slightly floured surface. Roll dough into a 2-inch think circle with floured rolling pin. Use a cookie cutter or jar lid to cut in circles and place on lined baking sheet.

Brush the scones with the beaten egg wash. Put baking sheet in the frig for 10 minutes to chill.

Remove from frig and bake in the oven on a middle rack for 15-17 minutes, until golden brown.

Serve warm. Enjoy!!
